Fast Fishcakes

Makes 6
I large tin of salmon
50g self-raising flour
2 eggs beaten
2 TB lemon juice
Salt and pepper
Oil for frying

Drain salmon, mash with bones, pick out big pieces of skin

Add eggs, lemon, seasoning and sifted flour

Mix well

Drop spoonfuls in to hot oil in frying pan, squishing into shape

Turn once

I don't actually like tinned salmon but these are so delicious!
